Classroom Christmas Idea: Cookie Exchange Including 3 Teacher Fan Favorite Recipes Fit for Any Budge

These recipes are tried and true favorites for my mom’s Teacher Christmas Cookie Exchange and they will be a hit for yours too! Teacher Christmas Cookie Fan Favorite #1: No Bake Chocolate Chip Cookie

2 cups sugar

½ cup margarine

½ cup cocoa

½ cup milk

½ teaspoon vanilla

3 cups quick oats

½ cup chunky or plain peanut butter

Place sugar, cocoa, milk and margarine in a saucepan, bring to a boil and boil for 1 minute.

Remove from heat and add peanut, blend well.

Stir in oatmeal and vanilla.

Drop by teaspoon on waxed paper and cool.

Makes about 30 cookies.

Teacher Christmas Cookie Fan Favorite #2: Cookie Monster’s Cookie Dough

You’ll need:

Medium-sized mixing bowl

Measuring cup and spoons

A fork

Ingredients:

Butter or margarine (soft, not melted)

Sugar

2 eggs

Vanilla

All purpose flour

Baking powder

Salt

How to make the dough:

1. Put ¾ cup of butter or margarine (that’s a stick and a half) into your mixing bowl.

2. Measure 1 cup of sugar.

3. Pour sugar over butter.

4. With a fork, squash butter and sugar together until they are blended.

5. Crack shells of 2 eggs and pour eggs over mixture in bowl.

6. Measure 1 teaspoon vanilla and pour over mixture.

7. With fork, blend everything in the bowl together.

8. Measure 2 ½ cups of all-purpose flour and pour over mixture in bowl.

9. Measure 1 teaspoon baking powder and sprinkle over flour.

10. Measure 1 teaspoon salt and spring over flour and baking powder.

11. Mix everything together either with the fork or with your hands.

12. Put dough in icebox to chill (at least one hour)

You can make LOTS of dough at once and keep it in your icebox in a plastic bag. Then whenever you make cookies, just take out how much you need!

Teacher Christmas Cookie Fan Favorite #3: Chocolate Chip Cookies with Oatmeal

These chocolate chip cookies are made with rolled oats and chopped pecans or walnuts.

1 ½ cups all-purpose flour

1 teaspoon salt

1 teaspoon baking soda

1 cup shortening

¾ cup brown sugar

¾ cup granulated sugar

2 eggs

1 cup chopped walnuts or pecans

2 cups semisweet chocolate chips

2 cups uncooked rolled oats

1 teaspoon vanilla

Sift flour with salt and soda.

Cream shortening and sugars; beat in eggs and vanilla until light and fluffy. Stir in sifted dry ingredients, chopped walnuts or pecans, rolled oats and chocolate chips. Drop chocolate chip cookie batter by teaspoonfuls onto ungreased baking sheets. Bake chocolate chip cookies in preheated 350 degree oven for about 10 to 12 minutes; cool on racks.

Makes about 8 dozen chocolate chip cookies.

Teacher Christmas Extra Credit: Homemade Cookie Frosting

1 ¼ cup confectioner’s sugar (powdered)

1/8 teaspoon cream of tartar

1 egg white

¼ teaspoon vanilla

Sift sugar and cream of tartar.

Add egg white, mix.

Add vanilla

For colored frosting add whatever food coloring to the mixture.
